Chicken Marinade Recipe
The following ingredient quantities assume that approximately 700g of boneless chicken will be marinaded. If using more or less chicken than this, adjust the ingredient quantities accordingly.

Honey | 2 tbsp |
Olive oil | 1 tbsp |
Soy sauce | 5 tbsp |
Lemon juice | 2 tbsp |
Worcestershire sauce | 2 tsp |
Garlic cloves | 4 cloves |
Oregano, dried | 1 tsp |
Pepper, black, ground | 1/2 tsp |

Directions
- Add ingredients to mixing bowl.
- Mix ingredients. If honey does not mix, heat the marinade slightly.
- Add chicken and marinade to tray or bag.
- Ensure chicken is completely covered in marinade.
- Leave chicken to marinade for at least 30 minutes before cooking. Preferably, leave chicken for 3-24 hours in refrigerator before cooking.


Substitutions
- No honey? Use brown sugar, white sugar, or maple syrup in the same quantity.
- No soy sauce? Use 1 tsp salt dissolved in 4 tbsp water.
- Only dark soy sauce? Use 2 tbsp then add 3/4 tsp salt and 3 tbsp water instead of 5 tbsp soy sauce.
- No lemon? Use a less sharp vinegar like cider, white wine, red wine or rice vinegar in the same quantity.
- No Worcestershire sauce? Use 2 tbsp ketchup or BBQ sauce or HP sauce or other savoury sauces, but then reduce the sugar by also slightly reducing the amount of honey.
- No fresh garlic? Use 3/4 tsp dried garlic powder, or 3 tsp jarred garlic, or 1/4 tsp onion powder.
- No dried oregano? Use dried thyme or mixed herbs in the same quantity.
